It can be described as modern French in style but is thoroughly based in classic French cooking. Ingredients are a mix of local Texas produce and items found as far away as the Mediterranean Sea and further.
It represents modernity as well as tradition. Bouillabaise is one of the specialties at bistro moderne and so is a very special \"Tatin of Duck\". Bouillabaise being extremely traditional while the tatin is made from slices of potato layered with brie cheese and confit of duck topped by a quenelle of goat cheese creme fraiche.
